Lacto-ovo-vegetarian

My name is Valerie, and it has been 13 days since I ate meat.

These look delicious...until you've gone 3 days without beef
and you're considering sneaking out of bed at 3 a.m. to hit up
McDonald's dollar menu. The shame!

Recently, I made the decision to go vegetarian for 40 days as a Lenten sacrifice. In answer to your question, I'm not Catholic and I didn't HAVE to do it. Lent offers a unique opportunity to make a sacrifice, to challenge yourself for 40 days to make a change that gives you a small glimpse into the ultimate sacrifice made by Christ.

Although it is a small sacrifice in the grand scheme of the world, giving up meat is a giant commitment in my life. Although I'm not a devoted carnivore, I still like meat. Chicken is practically a staple in my diet...in fact, just typing chicken made my stomach growl and my thoughts turn almost violently to Chick-Fil-A.

But that's the point. Forgoing meat has given me an opportunity to think about my relationship with God on a daily basis, an opportunity I value so much. Everytime I choose veggies over meat, I feel a connection to my faith.

Who knew giving something up could result in gaining something even greater?

here is a great vegetarian blog full of recipes complete with pictures. I ran across the site by her irish cream cupcake recipe :) www.lesliesarna.com

also, this is my all time favorite vegetarian recipe, Roasted Vegetables with warm lemon dressing, very filling and tasty. i usually skip the fennel and toss in artichoke hearts instead. http://www.williams-sonoma.com/recipe/roasted-vegetables-with-warm-lemon-dressing.html

Maybe the Easter Bunny will bring you Chick-Fil-A.
